New restaurant Luis in Aalen: fresh wind for the palate!

On May 22, 2025, the new “Luis” restaurant in Aalen opened its doors with a successful “soft opening”. Under the direction of Manuel Krauss (39 years) and his wife Jenny Krauss (34 years), the company is pursuing a fresh concept that should address guests with an international menu and regional ingredients. For example, there were positive reactions from the guests during the first few days, in particular with regard to the short waiting times for orders and the quality of service and dishes, such as the Schwäbische Post reported.

Manuel Krauss, who previously worked as a manager in the "Waldstube Eichenhof", brings extensive experience into the new gastronomic challenge. His wife Jenny will also take care of the social media presence of the restaurant. The restaurant offers 90 places indoors and plans to open the outdoor areas for about 60 guests later. The opening times are daily from 10 a.m. to 6 p.m., whereby open on market days and on Sundays from 9 a.m. A lunch menu is offered from 11:30 a.m., breakfast is available until 5 p.m.

comprehensive concept with regional focus

Not only the menu, which comprises creative dishes such as the Portobello-Mushroom burger for 21 euros and Shakshuka for 12 euros, testifies to an international approach. The ingredients also come from the region mostly: the bread from Hoffmann is also delivered from Hoffmann, the fish from Oberkochen, the eggs from Hermannsfeld and the vegetables from Pentz from Essingen. This reflects the growing trend to strengthen the regional connection in gastronomy - a development that, according to an investigation, shows that 78 % of guests prefer restaurants with regional products, such as the Gastronomywelt reported

The cake counter in the "Luis" will also be a highlight, with creative offers such as a spinach Heidelert cake. From June 1st, Lidija Bednaic will be part of the team that currently has no acute personnel worries, but is looking for another cook to strengthen the team. In the evening the restaurant wants to introduce additional opening times from Thursday to Saturday.

planned developments and challenges

The first steps of the "Luis" show promising progress, and in order to further secure the quality of the offer, the focus is on slow settlement. The hotel, which belongs to the restaurant, is expected to open its gates in mid -June. The team does not want to offer an "Eichenhof 2.0" imitation, but a creative, urban cuisine that has novelty and stands for the water kitchen in the region.

In view of the current challenges of the catering industry in Germany, as recorded on September 2023, the “Luis” thus shows a positive development. The industry dynamics will remain dynamic, while the restaurant is preparing to take on an important role in the varied gastronomic offer of the city.
