Historical cakes and cookies in the Café Blossomzeit in Wittenberge!
A very special café has established itself in the tranquil town of Wittenberge: the “Café Blossomzeit”. Not only are the senses pampered here, but stories from the cuisine of past centuries are also told. During the Corona pandemic, operator Mira Lange worked with historical recipes and integrated them into her café. Their specialties, such as the popular Portuguese coffee cake and the nostalgic Viennese cherry cake from 1870, are true contemporary witnesses that take guests back to earlier eras. A cookie based on a recipe from Fontane's grandmother is also part of the repertoire, which has been available to enjoy on weekends from 12 p.m. to 5 p.m. since 2024, as Nordkurier reports.
Mira Lange, who also works full-time as a harpsichordist and fortepiano player, founded the concert series “Klanglandschaft Prignitz” with her husband, the cellist Martin Seemann. Her passion for cultural history is reflected not only in the music, but also in the café's menu. She wants to revive old ways of life and has therefore studied old cookbooks from the years 1500 to 1900. She noticed that historical recipes are often incomplete and require a lot of research to reconstruct them.
Culinary journey through time
The recipes that Lange reinterprets come from a time when spices played an important role and baking powder was not yet used. It is fascinating how important food culture has been over the centuries. Gastronomy experienced a boom, particularly in the Belle Époque, an era from 1871 to 1914. The range of top wines was particularly impressive: the Bordeaux wines, such as the fine wines from Margaux and Lafite Rothschild, were a must on every festive table, as La Table du Temps Jadis notes.
During this golden age, food and drink were also celebrated as symbols of luxury. Champagne became the drink of the elite and was often used on the most celebratory occasions. Exquisite dishes based on old recipes were served. Wine played an essential role, with the combination of food and drinks being very important. White wines were often paired with fish dishes and heavy red wines with meat dishes.
A look into cookbook history
An introduction to the world of cooking is also provided by looking at historical cookbooks that shape the development of French cuisine. Works such as “Le Viandier” from the 14th century and “Le Cuisinier françois” from 1651 not only revolutionized the art of cooking, but also had a lasting influence on food culture. These writings are not only recipes, but also evidence of the respective times. They show how culinary art has developed from a simple craft into a respected art form, as The Paulim Magazine documents in detail.
The joy of historical recipes and the fascination for times gone by actually connect many people.
