A very special gastronomic project opened its doors today at Halle main station: the new pop-up store “Stella Moses”, launched by the star chef Stefan Marquard and the thriller author Uwe Wilhelm. This innovative fast food store will now be in test operation for three months in the cube at the main entrance to the train station and promises a healthy and sustainable offering that is all about modern nutrition.

The pop-up store concept aims to provide visitors with a quick yet nutritious experience. The main attraction are the so-called “Bellies” – filled falafel balls that are offered in various, sophisticated flavors. These include combinations such as “Green Power” and “Brown Choc”. All products are prepared with high-quality ingredients that offer lots of vitamins and fiber. “Eating is more than just getting full,” emphasizes Marquard, who wants to use his fresh cuisine to fight for more healthy eating in society.

Support from the city of Halle

The opening is being actively supported by the economic development department of the city of Halle (Saale). The founding of the food start-up is seen as a step in the right direction to strengthen Halle as a healthcare location. Olaf Unfrozen, team leader in the business department, explains that the establishment of the pop-up store is important for the city and will make a positive contribution to the gastronomic offering.

With an investment volume of over 30,000 euros, the mobile store is well equipped and, in addition to the “Stella Moses” team, three other employees are also employed for sales and promotion. The opening is also accompanied by various marketing campaigns designed to create a stir.

Future vision and expansion

The store in Halle not only serves as a testing ground, but there are already long-term plans for expansion. After the test operation, a snack bar and finally a restaurant will follow in the center of Halle. The founders have big plans and are also thinking about introducing healthy fast food into schools and canteens.

An innovative concept will be used here: “Stella Moses” will be combined with an AI-supported digital health platform that can create individual nutritional programs. Collaboration with supermarkets and ghost kitchens is also planned to make the offering even broader. Visitors to the pop-up store can look forward to a variety of healthy snacks that can be used in a variety of ways.

In a changing market for nutrition and gastronomy, “Stella Moses” could offer the opportunity not only to enrich the culinary offering, but also to set new standards for healthy nutrition - for different areas of life and requirements.
