Light cuisine in Barnim: healthy, inexpensive and creative cooking!

Today, the culinary world of Cologne is all about healthy, plant-based nutrition that is not only good for the body, but also tastes diverse. A special event under the motto “Light cuisine – inexpensive and healthy” took place in the plenary hall of the Barnim district, at which the health department gave fresh impulses. Professional chef Fabio Fioresi cooked with great skill and conjured up tasty samples that delighted the audience. The offerings included fried tempeh, a fine soup with amaranth, and hummus on cucumber and quinoa bread. The colorful vegetables were another highlight.

The message from Prof. Dr. was particularly important. Marcus Schmidt from the Eberswalde University for Sustainable Development, who emphasized the importance of legumes such as chickpeas, amaranth and millet. According to Schmidt, these ingredients should be integrated much more often into children's diets. He advocated getting used to varied tastes early on, especially in daycare centers and schools. Franziska Neumann, doctor from the child and adolescent health service, added that a healthy diet not only influences eating habits, but also has health and environmental consequences.

The value of chickpeas

A central part of the discussion was the role of chickpeas in the diet. A valuable contribution came from this event, as chickpeas are considered one of the oldest crops in the world and are a staple food in many cultures, especially in India. They are real nutrient bombs: rich in fiber, vitamins and minerals that not only cleanse the intestines, but also create a long-lasting feeling of satiety. NDR reports that daily servings of 200 grams of chickpeas can not only extend lifespan, but also reduce the risk of cardiovascular disease.

The health benefits are no coincidence. Chickpeas are high in protein and contain all nine essential amino acids. Their clever combination of soluble and insoluble fiber helps regulate blood sugar levels and can therefore reduce the risk of type 2 diabetes. A step into a healthy future

Another program item at the event was the “Healthy on the Plate” art initiative, in which preschoolers demonstrated their creativity by painting healthy foods on paper plates. The winning plate received group entry to the Eberswalde Zoo, which certainly not only contributed to the joy of the children, but also highlighted the importance of a healthy diet for the little participants.

As Silke Vollbrecht from the Brandenburg Consumer Center emphasized, many are faced with the challenge of choosing healthy and sustainable food. Nevertheless, she is optimistic that it will be possible to find a combination of good taste, suitability for everyday use and health awareness. She also provided information about upcoming online events on topics such as food waste.
