Görlitz baker defy crises: bread test with record notes!
In the heart of Görlitz, the annual bread and bread roll test took place recently, which was organized by the guild with a lot of enthusiasm. Among the participants, David Jahn, who traveled from his Höfchen bakery with two delicious types of bread, the rye-spelled bread and the popular core bites. Despite the challenges that the bakery trade currently has to master through rising wage costs and lack of staff, Jahn remains optimistic. "You always need food, even in times of crisis," emphasized Gottfried Paul, the guild master while he spoke about the stability of his industry.
The essence of the exam itself, which ran over two days, was worn by examiner André Bernatzky, who examined 72 bread and 34 bread samples and two fine baked goods. Bernatzky was able to convince the jury with excellent quality: 82% of the bread were rated with a "very good", only two samples did not clear the exam. For the rolls, the hitrate was even "very good" at 92% - an award that only deserves the best of the best.
A look behind the scenes
The Höfchen bakery, which David and his wife Konstanze took over a year and a half ago, now employs around 50 people. In addition to the traditional bakery, you rely on two sales cars that deliver to Weißwasser, Bad Muskau and loop. The fact that baking is more than just the right recipe is shown in the hustle and bustle. Jahn hopes that his son, who is currently working as a journeyman, will also enter his footsteps one day and has the master's certificate in his pocket.
Similar activities took place in parallel to this regional exam round, which were organized by the Bäcker and confectioner guild of Soest-Lippstadt and the Hellweg-Lippe bakery. Here 12 guild bakeries from the surrounding counties took part. The aim was to demonstrate the high quality of the baked goods and at the same time to promote professions in the bakery trade. This initiative is a nice example of how the industry holds together despite difficult circumstances. Innovations and tradition unite while examiner Christof Nolte invested in order to clarify the future talents of the craft in an information event about the paths to the bakery profession. The results of these national events are easy to understand. The test results can be viewed online via the "Bäckerfinder" function on the website of the German Brotinstitut, where the subtleties of the tested products are explained in detail. The longing for real artisanal baked goods remains unbroken even today, and with so many excellent offers it is no wonder that the bakers are very popular in the region.
Overall, it can be seen that despite all the challenges, the bakery trade not only defies crises, but also flourishes, and it remains to be hoped that this tradition will be kept alive through future generations. In order to have a good hand for it, both passion and manual skills are needed, and in Görlitz both are practically implemented with a lot of love.
