Grevesmühlen, Deutschland - The Syrian restaurant "Bouza Maz" in Grevesmühlen has been closed since the end of May, and this has caused some unrest for the local community. Operator Mazem Kitmitto has done his best since his arrival in Germany in 2019 to bring back a piece of his homeland in gastronomy. The reason for closing the "Bouza Maz" are unsolvable problems with the homeowner, in which an agreement was not possible. Despite a reference to the front door regarding a move to a new location, nothing has happened so far. However, the name of the restaurant can still be seen in the shop window and evokes memories of a time when the tastes from Damascus enriched the cityscape. Kitmitto, who previously operated a Freytag bakery in the same building, wants to stay in Grevesmühlen, but has not yet found a suitable object to continue his restaurant.

Before closing, the operator with his restaurant was not only able to offer Syrian specialties, but also beat a bridge between different cultures. Because gastronomy is often also a place of encounter that is of crucial importance in a multicultural society. This is also evident in other cities such as Munich, where locals and refugees come together and break through their kitchens during events such as cooking evenings in the adult education center. The initiative "Cooking on the box" has been committed to promoting such encounters.
Nowadays over 30 participants come together to prepare Tunisian dishes such as couscous and tajine together. These cooking evenings are the result of commitment and the desire for integration. The co-organizer Jasmin Seipp has been active since 2015 to help refugees better integrate in Germany. Not only is the food culture shared; There were also numerous friendships and a better understanding of each other.
